Advellum Vegetable Eatery Pop-Up
Once The Market at Malcolm Yards opens in Prospect Park, you'll find Advellum Vegetable Eatery there. Until then, they're offering pop-ups so you can get a peek at what they have to offer. They are not a full vegan eatery, but their menu is vegetable-forward and vegan-friendly.
I attended their first pop-up at The French Hen Cafe in Saint Paul and enjoyed a relaxed evening outside with Advellum's delicious food.
Appetizers
My partner and I shared the two appetizer offerings: Bury Beets Salad and Avocado Toast. The salad was super earthy thanks to the beets, shaved fennel, and red lentils. Strawberries, mint, and ginger-champagne vinaigrette lifted it nicely to help round out the dish.
The toast was topped with avocado pieces, arugula, radish, cucumbers, tomatoes, pepitas, cranberries, and a charred tomatillo vinaigrette. It came out on a half slice of bread, so I feel like the toppings were too ambitious for this small offering. I never would have picked up on all of the ingredients, but the chef informed me that once the restaurant is open, it'll be three pieces of toast which will make a big difference.
Entrées
The Mung Bean Pancakes came with pork belly, which was the only animal meat on the menu. Leaving this off made the dish vegan, and it's always nice when you don't have to make three hundred modifications to a dish to make it vegan. The pancakes were topped with oyster mushrooms, bok choy kimchi, gochujang aioli, carrots, scallions, and sesame seeds.
I could have done without the oyster mushrooms since they were big, chewy pieces, and the dish had enough going for it without them. The aioli and kimchi gave it a pleasant heat, and the carrots and kimchi provided a good crunch - just the way I like it.
My partner selected the Wild Boomer Burger, featuring a wild rice and mushroom patty topped with arugula, pickled red onions and chiles, and grilled ramp aioli on a sesame bun.
The patty held together decently (seemingly rare for house made patties), and my partner enjoyed it. The side of carrot-cucumber slaw was fresh and crunchy with a sesame-soy vinaigrette.
Dessert
For dessert, we shared the Chocolate Caramel Bars and Almond-Coconut Tarts with Blackberry Jam. I thoroughly enjoyed both options. The caramel was nice and thick and had a nice balance with the chocolate in the bar.
The crust of the tart was pretty crisp, and it was slightly too big to eat in one bite which made it challenging to eat without the filling spilling all over. BUT, wow. The almond-coconut tasted like cheesecake, and everything came together perfectly, right down to the pop of mint.

Advellum's next pop up is May 16, and you can find details on their website. It looks like the menu options will be the same, and it's a 3-course meal for $35 which is incredibly reasonable. Drinks are purchased separately on-site, and make sure your tip factors in the cost of the meal.
I'm excited to see Advellum Vegetable Eatery makes its stamp in the Twin Cities for its unique flavor combinations and attention to texture. They'll be great for date night or a special occasion, but they also have a casual enough feel where you could swing by anytime for a bite.
