Mother Earth Vegan Hotel in Costa Rica
Mother Earth Vegan Hotel is a beautiful vegan boutique hotel located in Tamarindo, which is on the northwestern coast of Costa Rica. The hotel boasts only fourteen rooms for a highly personalized experience, with a poolside restaurant, yoga studio, and other restorative therapies like massage and sound healing. About an hour shuttle ride from Liberia Airport, the hotel is easily accessed, and it’s a fifteen-minute walk to the gorgeous beach that makes Tamarindo a busy tourist town.
My partner and I spent three nights at Mother Earth Vegan Hotel in January, which is during the dry season with consistent 80 degree days. We enjoyed an ATV ride along the coast and ziplining in the mountains, but for the most part, we relaxed at the hotel and made our way through the plant-based menu.
Tico Breakfast
The Tico (Typical) Breakfast is included in the room cost, and we loved it so much that we had it more days than not. You get rice and beans, avocado, fried plantains, breakfast potatoes, pickled onions, and pico de gallo with tortillas, so you can build your own little breakfast tacos. We found the Tico Breakfast delicious and filling.
Omelet
The only other breakfast item we tried is the Omelet. It’s a chickpea omelet, and we found it to be more like a crepe with a light amount of filling of mushrooms, onions, and peppers. You could also add Beyond Sausage. We definitely preferred the Tico Breakfast.
Grilled Kebob Skewer
The skewer appetizer includes Beyond Sausage with veggies. Everything was grilled perfectly, and it was the perfect amount for an appetizer.
Rainforest Salad
We also tried the Buffalo Cauliflower Appetizer which was flavored and prepared perfectly. That night, I also had the Rainforest Salad with kale and other greens, veggies, and both pesto and passionfruit dressing. The passionfruit was very tart, and it was an acidic salad overall. I enjoyed the salad, but it was a bit much for me because of the acidity.
Pesto Pasta
On the flip side, I couldn’t get enough of the Pesto Pasta, which was filled with seasonal veggies (mainly squash). I ordered it at two different meals. Pesto is one of my favorite things, and even with the pasta, this dish felt light and fresh.
Tuna Sandwich
One of the days, we wanted a light lunch, so we tried the Tuna Sandwich, which was just what we were looking for. It’s made with chickpeas and hearts of palm, and it wasn’t super fishy, but the flavor and texture were what I look for in a plant-based tuna.
Mother Pizza
At $25, we weren’t sure we wanted to try the Mother Pizza without knowing what to expect, but of course we weren’t steered wrong. The pizza was huge and packed with mushrooms and veggies. And it was plenty to make two meals for each of us.
Dessert
Finally, of course we worked our way through the dessert menu. From Strawberry Shortcake to Cannoli to Lava Cake. They were all gorgeous, and I have a huge sweet tooth, but honestly, if I had to pick between the savory and sweet options at Mother Earth Vegan Hotel, I’d go with savory. I have no question that they’re priced well, but they weren’t quite as on point as I wanted them to be for what we paid. Like the shells of the Cannoli were bland, and the Lava Cake came with some weird adornment that looked like algae but had zero flavor, and I’m honestly not sure if it was supposed to be edible. All of the other desserts were completely edible, which is why I assumed this was supposed to be as well.

Mother Earth Vegan Hotel’s bar is for both alcohol and smoothies, and we enjoyed plenty of both. I especially loved the cocktails that had fresh fruit muddled into them. The staff was always immensely friendly, and (in typical Costa Rica “Pura vida” fashion) offered a relaxing, laid-back dining experience. They’re the heart of the whole experience.
