Tattooed Chef’s Spaghetti Bolognese
Target has been adding more options from Tattooed Chef to its freezer aisle, and I most recently tried the Cauliflower Spaghetti with Plant-Based Bolognese. Note that not all of their products are vegan, so make sure the package says “vegan.” The majority of their products are also labeled gluten-free.

When I opened the bag, I had to laugh because there were a few large orangey-colored frozen balls, and then smaller gray-brown pieces that made me think of Dippin’ Dots. (It would probably make for a pretty disappointing flavor, though.) I assumed the larger balls contained the pasta somehow and started to cook it down.
All you have to do is add some oil and water (though you could probably skip the oil, if you wanted) and stir occasionally. Within a couple minutes, the pasta started to emerge.
The meal took about ten minutes in the end, and it was just the right amount for two people. It was really tasty! The noodles held their shape, and the pea protein beef crumbles added a bit of extra texture. The sauce had a nice consistency, too. I may have had my stove on a little too high because some of the moisture cooked out and it started to get really thick, but it loosened up fast once I added more water.
I would get the Cauliflower Spaghetti Bolognese again with no hesitation. I love how quick and easy it is, but you still feel like you cooked. You could add a side salad or garlic bread, or even add a few more spices to the dish to deepen the flavor.
I’ve tried a couple of Tattooed Chef’s individual frozen meals as well. The Pesto Harvest Bowl was good but too salty. The Egg Roll Bowl is packed with veggies and soy crumbles, though I wouldn’t mind a little bit more. When I bought the spaghetti, I also picked up the Riced Cauliflower Stir Fry, which is cauliflower rice, peas, corn, and red bell peppers in a sesame ginger sauce, so I’ll probably add plant-based Korean ribs or steak to round it out.
